Potato is a carbohydrate-rich food. Freshly harvested potato contains about 80 percent water and 20 percent dry matter. About 60 to 80 percent of the dry matter is starch. Since the starch in raw potato cannot be digested by humans, they are prepared for consumption by boiling (with or without the skin), baking or frying.

A small portion of this starch is resistant to digestion by enzymes in the stomach and small intestine, and so reaches the large intestine essentially intact. This resistant starch is considered to have similar physiological effects and health benefits as fiber.

How to Use Potatoes

Potatoes need to be washed  thoroughly with clear tap water and  also need to scrubbed before cooking. Any sprouts growing from potato should be removed be fore preparation. Skin of potatoes may or may not be removed.
