Gluten Free banana or pumpkin muffins recipe.


Ingredients:

  • 3 medium ripe banana smashed or 9 ounces of pumpkin.
  • 1/3 maple syrup
  • 1 teaspoon of vanilla.

Mix them together and keep aside.

Toppings:

  • 1 cup sugar
  • 2 teaspoon cinnamon

Mix together and keep aside.

Ingredients to mix Muffins:

  1. 2 cups gluten free flour.
  2. 1 teaspoon xanthan.
  3. 1 cup packed brown sugar
  4. 1 teaspoon baking soda
  5. 1 teaspoon salt
  6. 1 teaspoon pumpkin spice
  7. 1 teaspoon buttermilk powder
  8. 2 eggs beaten
  9. 1/3 cup vegetable oil
  10. 1/2 cup water

Directions to make

Mix all dry ingredients into a mixing bowl, make a well in the middle and add the wet, stir with a mixing spoon softly until combined-don’t stir just blend.Gently fold in Banana’s or pumpkin mixture with a knife until blended. let it rest for 7-10 minutes.Fill the foil cup cake paper and place a cookie sheet.Top it with the topping mixture and bake at 375F degree for 10-15 minutes or until done. place on a wire rack to cool.
